Elote Salad

Ingredients
- 2 14 oz. cans of corn, drained
- 1 heaping tablespoon mayonnaise

1 jalapeno

2 garlic cloves, finely diced

1/2 stick of butter
- Tajin
- Cotija cheese
- Salt, to taste
- Hot sauce, to taste
Instructions
Step 1: Melt butter over medium heat. Add onion and jalapeño. Add salt and pepper to taste.
Step 2: Once onion and jalapeño are softened to liking, add garlic and cook until fragrant.
Step 3: Add corn and cook until warmed through and cooked.
Step 4: Take out mixture and put into mixing bowl. Add 1 healing tablespoon of mayo to the bowl and stir to combine. Add more as needed until all of the corn has mayo on it.
Step 5: Add as much Tajin and cotija as you want and stir all together to combine.
