Spicy Sausage Soup
If you are on a low carb lifestyle, but you are tired of meat and cheese, this is the meal for you! Combining spicy Italian sausage with a flavorful soup base makes this a hearty meal that does not skimp on flavor.
If you are not a fan of heat, you can absolutely make this soup with mild or even sweet Italian sausage. There will be no compromise on flavor!
You can top it with croutons or serve it with a side ofc cornbread. This soup is substantial enough to be a complete meal without any additions though!
Ingredients
- 2 lbs. ground hot Italian sausage
- 4 cups of chicken broth (I use low-sodium whenever possible)
- 1 white or yellow onion (diced)
- 8oz. block of cream cheese
- 4 cloves of garlic (peeled and minced)
- 14.5 ounce jar of tomato sauce
- 1/2 cup heavy cream
- 1 cup shredded parmesan cheese
- Salt
- Pepper
Instructions
Step 1: Cook sausage until halfway cooked. Add in your diced onion and garlic and cook until onions are translucent and sausage is no longer pink.
Step 2: Add in cream cheese and cook until fully melted into the meat.
Step 3: Add in tomato sauce and chicken stock. Bring to a boil and cook for about 10 minutes, or until it starts to slightly thicken. Salt and pepper to taste.
Step 4: In batches, add in parmesan cheese, ensuring that each portion melts before adding in the next.
Step 5: Add in heavy cream and stir to combine.
Step 6: Assemble! Pour soup into bowls and top with a little extra parmesan if desired. We also like to top with croutons. Enjoy!
