Spicy Pork Ramen

In our family, Asian food is at the top of the list of our favorite things! We love spicy food, and this delicious ramen is top tier. It gives the spice that you want, but it is well balanced with sweet ingredients like corn and hoisin. 

You can substitute the ground pork for something a little less fatty such as ground chicken. Keep in mind though that a protein like chicken or turkey will require more seasoning. 

Adding the perfect amount of crunch and flavor on top are those lightly fried shallots. You can add mushrooms in as well. My family does not like mushrooms, so we did not put those in.

Ingredients

  • 3 packs beef ramen
  • 1 12oz bag of frozen corn
  • 1/2 lb. ground pork
  • 1 bunch green onions (separated into whites and greens)
  • 1 shallot - sliced
  • All-purpose flour
  • 6 cups of water
  • Oil for frying (vegetable or canola)
  • 2 tbsp Hoisin sauce
  • 2 tbsp grated ginger
  • 2 tbsp grated garlic
  • 1 tsp red pepper flakes
  • 1 tbsp sriracha
  • 1 tbsp sambal
  • 1 tbsp brown sugar
  • 1 tsp soy sauce

Instructions

Step 1: Bring water to a boil and cook noodles and corn according to package instructions. Save pasta water. You will use this later.

Step 2: Sautee garlic, ginger, and red pepper flakes in a wok until fragrant. Add in sambal, brown sugar and soy sauce. Add in the seasoning packet from the ramen pack. 

Step 3: In a separate pan add some oil and cook half of whites of the green onions, sriracha and the pork. Cook until no longer pink.

Step 4: Coat the sliced shallots in flour and lightly fry in oil to reach desired crispiness. This does not take long. 

Step 5: Add hoisin to sauce mixture and begin adding in the noodle cooking water to desired soupiness. 

Step 6: Assemble! Put noodles in bottom of bowl. Top with broth, then pork, greens of the green onions, corn and fried shallots. If you desire, you can add more sriracha to bring up the spice level.

Step 7: Enjoy!
